Course description

The aim of the course is to learn about the connection between food and culture, how food has become a central art field in France, and why France leads the world's gastronomy. During the course we will learn about the art of medieval gastronomy going through the French Revolution to this day. Topics will be studied in the context of religion, society, art, science, technology and politics.

  
During the course we will review important events in the history of France that influenced gastronomy and vice versa. We will introduce different streams in table art and cooking techniques. Special emphasis will be placed on wine in France and the culture of discourse at the table.


During the course, videos and presentations will be screened. The course is accompanied by the students' participation.
